Easy Breakfast Egg Bake (Keto Style)
Whenever I first started eating keto, I felt a bit overwhelmed to be honest. It took me a while before I really grasped the concept of how it all worked and how to actually eat a balanced diet without going over my calories and macros for the day. In reality, I probably made it much more complicated than it needed to be. Either way, I was swimming in a sea of Pinterest keto recipes and did not have my life jacket on, so I developed this easy breakfast egg bake and it became that thing I looked forward to every morning.
Why I love this easy breakfast egg bake
First, I truly love this easy breakfast egg bake because of how delicious it is! Chris and Branden aren’t big veggies eaters, so I pretty much get this all to myself. After it comes out of the oven, I slice it after it cools into 6 hearty squares and it’s wonderful to just have breakfast prepared for almost a week!
How to make this easy breakfast egg bake
It’s so easy to make you’ll be wondering how you ever lived without it!
What you need to make this easy breakfast egg bake:
- 8 eggs
- 1 pint of mushrooms
- 2 cups of spinach
- 1/2 an onion
- 1/2 cup heavy cream
- 1 cup cheddar cheese
- salt, pepper, and garlic powder to taste
Step one: Preheat the oven to 350 degrees. Beat your eggs and combine eggs, cheese, heavy cream and seasonings to taste.
Step two: pour the mixture into your baking dish.
Step three: On the stove, saute your mushrooms, spinach, and onion. Then pour this mixture on top of the egg mixture in your baking dish. Place in the oven for 20-30 minutes (depending on your oven). Let cool and cut into 6 equal, hearty pieces of egg bake heaven!

- 8 eggs
- 1 pint of mushrooms
- 2 cups spinach
- ½ an onion
- ½ cup heavy cream
- 1 cup cheddar cheese
- salt, pepper, and garlic powder to taste
- Preheat your oven to 350
- Spray your baking dish with olive oil
- Mix eggs, cream, cheese, and seasonings - pour in a baking dish, set aside
- In a skillet, combine your spinach, onion, and mushrooms
- Once veggies are cooked, mix them in with the egg mixture
- Bake for 20-30 minutes depending on your oven
I hope that you all enjoy and love this easy egg bake recipe as much as I do. You can easily swap the veggies for other keto friendly veggies if these ones aren’t your jam, but I really do think that this combination is spot on. This makes the perfect breakfast for busy mornings whenever you just need to heat something up and go, but I’ve also been known to eat it for lunch, too (especially if I’m intermittent fasting).
