An Easy Healthy Dinner For Even The Busiest Nights
If your days are anything like mine, you pretty much blink your eyes and its 4pm and you need to figure out what you’re making for dinner. Time moves so fast whenever you have work and life and kids running around and the struggle is real to get a meal on the table that’s not only picky eater approved, but healthy, too. One of my resolutions this year was to try not to obsess so much about meal time, and utilize recipes that create easy healthy dinner options for us all.
But, before I get into these easy healthy dinner recipes, I wanted to clear something up that you’re probably wondering, since this clearly isn’t a keto-friendly meal. I stepped away from keto because it got so difficult around the holidays and realized just how annoying my eating habit had become to my whole family. I also realized how the main goal of dinner time is really to bring the whole fam together at the end of the day, and keto wasn’t doing that for me anymore. So I’ve found a new balance and these easy healthy dinner recipes for families are refreshing, balanced and can be altered to meal prep, made in larger or smaller quantities and will leave your whole crew satisfied. And I’m sharing a little secret: PERDUE® FRESH CUTS™ chicken has been the star of our dinners these days.
Easy healthy dinner recipes for families
Ok you guys, these quick easy healthy dinner ideas are so simple to make and really can be altered to taste. Here’s what you need to get started on this sheet pan meal:
- Fresh veggies of your choice (I used carrots, broccoli and mushrooms)
- PERDUE® FRESH CUTS™ chicken – strips or diced both work, I used both because I like to try to get the recipe to last long enough for leftovers!
- A marinade of your choice (you can simply throw together olive oil and seasonings if you don’t have anything specific on hand)
- Baking Sheets
- Brown rice, leftover mashed potatoes or nothing (depending on if you want a starch or not)
Step one: Pre-heat your oven to 400 degrees. Then, simply dice up all your veggies or even buy pre-diced at the store to save an extra step.
Step two: Toss your veggies onto your baking sheets and brush your marinade on top.
Step three: Open up your PERDUE® FRESH CUTS™ chicken strips and empty them into the marinade. I love how these are pre-cut and save SO much time in the kitchen for me during the nights I need it most!
Step four: Repeat step 4 with your PERDUE® FRESH CUTS™ chicken diced chicken and stir. Make sure the chicken is completely coated. I love how Perdue® comes with a “no antibiotics ever” promise, it puts my crazed mind at ease.
Step five: Spoon the chicken mixture onto the remaining space on your baking sheets and toss in the oven.
Let cook for about 30 minutes or so (depending on your oven), mixing up once or twice throughout. I also like to leave the carrots in extra long to get a little crisp, so you can remove the chicken first (it will probably be done sooner) and let them crisp up.
Remove your chicken and veggies and everything is hot and ready to serve! Like I mentioned before, you can eat this alone if you’re doing low carb, or toss it over leftover rice or mashed potatoes and you’re ready to spend some quality time with your family since you saved so much time in the kitchen!
