Easy Southwest Kale Salad
I almost couldn’t believe waking up today that it was September! September brings much newness in my life, as B turns 7 this month and starts 2nd grade. I’m so excited for apple and pumpkin everything, and leggings and boots! But for now, I’m super excited to share my summertime favorite: Easy Southwest Kale Salad!
As for the blog, you will see some tweaking here as well – all for the better! If you followed along this summer, you read how I was in a bit of a “fitness funk,” which has made me realize how important being healthy is to me. This southwest kale salad will get you excited for lunch again
I’m so excited about all the fun changes, and everything that’s in store! And you know what else makes me excited? Lunch time whenever I know this salad is waiting for me! It has been a favorite of mine for a while and highly recommended as a super healthy way to spice up your regular salad routine (I know that I get bored when I eat the same salad every day!). I usually make this southwest kale salad the day after I make corn on the cob for dinner and throw an extra piece in the pot – so easy!
- 1 bag baby kale mix
- 1 corn on the cob (cooked)
- 1 can black beans
- 1 red onion
- Tomatoes
- Juice of 1 lime
- 1 Avocado
- Mix together all ingredients in a large bowl except for kale and avocado.
- Let sit in refrigerator to marinate together
- When you are ready to eat, simply spoon the mixture on top of your kale and slice some fresh avocado on top!

Eating a simple kale salad a few times a week has so many amazing health benefits for your body. First, kale has zero fat, is low in calories and is filled with fiber – so you stay fuller, longer. It helps with digestions and is overall something that I call a superfood for all those amazing benefits! I also love how all the flavors come together and there is no need to add additional salad dressing on top.

The added bonus with this super Easy Southwest Kale Salad recipe is that it basically makes its own dressing, so there is no need to add anything extra. Since I’m the only one in my house (currently!) that will eat anything this healthy, it’s enough for 4 lunch servings, all for me!
