Healthy Meals to Lose Weight

Not gonna lie – I’m still struggling to lose the pesky baby weight over here. There are a few pounds that just don’t want to come off and I’ve been seeking healthy meals to lose weight every single time I grocery shop, because I get bored with what I eat quickly and need to mix things up. After trying a few different things out, I feel like I finally found the secret to making sure that I always make healthy choices: through meal planning. So whether you’re trying to lose weight like me, or searching for healthy meals during pregnancy and breastfeeding, I’m sharing my best tips with Rubbermaid BRILLIANCE (and a giveaway!) – plus a new recipe that’s perfect for summer!

Breakfast

For a good two years now, I’ve been all about those overnight oats, which are also great when you’re breastfeeding to help with milk production. I make these in huge batches, and store them in my largest Rubbermaid container and scoop out breakfast portions for a good week. My favorites are chia see and banana and pumpkin – they are absolutely delicious and you feel great eating them!

Lunch

Salads are always my go-to during lunchtime, but like I said before, I need to switch things up often or else I get bored – then I want to start eating all the bad things. My favorite salad to make ahead are my southwest kale salad and the new recipe that I included below for my cold beet and quinoa salad – both so refreshing!

Dinner

Dinner is typically the meal that I cook a little less healthy and don’t plan ahead as much because I’m taking everyone’s likes and dislikes with food into consideration. But, this butternut squash and carrot soup has been a winner! Hint: cook it without the pepper and rosemary and it can double as baby food.

Recipe: Cold Beet and Quinoa Salad

This is what I’ve been carrying around in all these pictures because it’s perfect for on the go and so, so easy to make a big batch of ahead of time, making it one of my favorite healthy meals to lose weight. Here’s what you need:

16oz of pre-spiralized beet noodles

1 cup organic quinoa cooked (use the easy package directions)

1 bunch of Brussel sprouts halved

1 tsp coconut oil

Balsamic vinegar, to taste

Simply get a large pan hot and throw in your Brussel sprouts with your coconut oil and cook until they start to slightly brown and throw in the beet noodles. Once they both are cooked to your living, toss in the cooked quinoa and sprinkle with as much balsamic vinegar as you’d like. Stop in the refrigerator and scoop out as you need to eat. It makes about 5 lunch size servings.

  7. My favorite healthy tip is drink lots of water and I freeze grapes for an afternoon snack! I tend to always have a sweet tooth in the afternoon and the grapes can usually fight it off. Sometimes though… a girl just needs some chocolate 🙂
