Hey guys! Surprise, surprise, I’m back to the keto diet again. You all know how I’ve boasted about how incredible it makes me feel, I honestly just do it for the energy and focus boost that I get. Losing a few pounds is always just an added bonus. I’ve been feeling incredibly sluggish lately and a little bit out of it, so I started keto again about 10 days ago and I’ve been going strong and feeling wonderful.
I almost feel like it gets easier every single time I start. Maybe because I’m more experienced, or maybe because there are more products on the market that make the keto diet much easier. Either way, I wanted to create a new recipe that was easy to make and also satisfied my sweet tooth and no bake keto cookies were born. I’ve been loving the salted caramel and cashew version with a little sprinkle of chocolate chips, but I’m sure you could mix things up a bit to suit your taste. No Bake Keto Cookies: Salted Caramel Chocolate Cashew
These cookies are so incredibly easy to make!
What you need to make these no bake keto cookies:
-8 tbsp salted butter
– ⅓ c Swerve brown sugar substitute
– ⅓ c Heavy whipping cream
– 1 c cashews
– ⅛ c Lily’s baking chips
How to make no bake keto cookies:
Step 1: Melt your butter in a saucepan on the stove at medium heat. Whenever the butter has completely melted, slowly whisk in your Swerve brown sugar until that has completely dissolved.
Step two: Pour in your heavy whipping cream and cook for about 10 minutes, stirring frequently until things start to get a little bit thicker.
Step three: Once your caramel sauce thickens, our in your cashews and remove from heat. Let sit for a minute or two and then spoon out the mixture into 11 “cookies” on a baking sheet covered in parchment paper or wax paper. Top with your chocolate chips.
Step four: Let them sit in the refrigerator for at leave an hour to completely cool and harden. I then take the no bake keto cookies off the wax paper and store in a Tupperware container until I’m ready to eat and enjoy!
How to store these no bake keto cookies:
These no bake keto cookies need to be stored in your refrigerator or else they will melt. They can stay fresh and enjoyable for a couple of weeks, but I seriously doubt they will last that long!
