I am a sweet lover through and through and while most of my cravings go in the direction of chocolate, I am also very obsessed with everything lemon. I’m not an incredible food photographer and I don’t pretend to be, but I hope you are able to see through my photos just how fluffy, soft, and perfect these keto lemon cookies are!
The Perfect Keto Lemon Cookies
Another thing I love about these keto lemon cookies if how easy they are to whip up in a jiffy. I even had a little helper, which you will see as you keep scrolling. I always try to get the kids involved in the kitchen as much as possible because then they are more inclined to try new foods and eat what they helped make. Mom win!
If you aren’t new to keto, most of these items are basically pantry staples at this point. However, if you are new to the keto diet START HERE, I have some wonderful resources for you!
What you need for these keto lemon cookies:
- 1/2 cup Coconut Flour
- 1 1/2 cup Almond Flour
- 2 tsp Cream of tartar
- 1/2 tsp Xanthan Gum
- 1 tsp Baking Soda
- sprinkle of salt
- 1/2 cup butter
- 3/4 cup Swerve Granular Sweetener (Or whatever you have on hand! I used the Swerve Brown Sugar the day I made these!)
- 2 Eggs
- 1 tsp Lemon Extract
- 1 tbsp Lemon Juice
For the glaze:
- Almond Milk
- Swerve Confectioners Sugar
- Lemon extract
How to Make Keto Lemon Cookies
These keto lemon cookies are so easy to make that you will add them to your baking rotation right away!
Step 1: Blend all of your dry ingredients together in aa large mixing bowl.
Step 2: Blend all of your wet ingredients.
Step 3: Combine all of your ingredients together.
Step 4: Roll your dough into one inch balls and place them on a greased baking sheet or add parchment paper. I had a little helper for this step! After you set them on the baking sheet, smash them down a little bit so they look more cookie-shaped.
Step 5: Bake at 350 degrees for 10-12 minutes (depending on your oven) and then let cool.
Lastly, the glaze: I honestly just eyeball it with these three ingredients because everyone likes their glaze to be different consistencies. You really only need a splash of the salmon milk and lemon extract to the Swerve confectioners sugar, but play around with it. Some days I like it to be thicker, other days I like it runny so it doesn’t add too much sweetness. It’s up to you!
Make the glaze after the keto lemon cookies are done cooling and spoon it on top of each cookie for a lemon explosion of flavor – seriously, so yummy!
How to store keto lemon cookies
Just like with most keto-friendly cookies (other than fat bombs that is) it is best to store them in an airtight container at room temperature. I just leave mine in a big, square Tupperware container sitting on our counter and they are good to eat for 5-7 days!
